This delicious bread from Peter Reinhart's "Artisan Breads Every Day" is studded with wild rice and onions and requires just a few minutes of kneading. It can be made into sandwich loaves, baguettes, round loaves or rolls. Fresh or dried onions can be used.

I realize just now that my version of the recipe is even longer than Peter Reinhart's, which I didn't think was possible, but the process really isn't difficult at all. I simply tried, as I always do, to go into as much detail as I thought would be helpful. 1. Place the ingredients from flour to milk in a large mixing bowl, or in the bowl of a stand mixer.
